This fabulous recipe was originally passed down to me by my dear friend Ansley, who received it from her incredible mother. Although I’ve never had the pleasure of meeting Ansley’s mom, I hold a deep appreciation for her, much like a beloved family member, simply for sharing this culinary treasure. Originally, these muffins were known as “Traveling Muffins,” a fitting name given how quickly they disappear once made. However, once they inspired Randy’s unforgettable song, it was only natural to rename them our “Singing Muffins.” The new name perfectly encapsulates the joy and delight they bring. (Another personal reason for the rename was quite practical: as “traveling muffins,” they truly wouldn’t last long enough to make it out of my car!) The original recipe also featured raisins instead of cranberries and pecans instead of pistachios. While those are lovely combinations, our preferred twist with the tart cranberries and savory pistachios adds an extra layer of complexity and texture that we simply adore.

Ingredients

  • 2 sticks (1 cup) unsalted butter
  • 3 squares (3 oz.) semi-sweet chocolate, chopped
  • 1 cup fresh or frozen cranberries (washed and thoroughly dried)
  • 1 3/4 cup shelled, dry-roasted, salted pistachios
  • 1 cup all-purpose flour
  • 1 3/4 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350-degrees F (175°C). This ensures your muffins start baking immediately upon entering the oven, promoting an even rise.
  2. Prepare your muffin tins by greasing them thoroughly or lining them with paper liners. This prevents sticking and makes for easy removal.
  3. In a small saucepan, gently melt the butter and chopped semi-sweet chocolate over low heat. Stir occasionally until smooth and fully combined. Be careful not to scorch the chocolate.
  4. Remove the saucepan from the heat and stir in the cranberries and pistachios into the melted butter and chocolate mixture. Set this mixture aside and allow it to cool completely to room temperature. This crucial step prevents the eggs from scrambling when combined.
  5. In a separate large bowl, combine the flour, sugar, eggs, and vanilla extract. Mix gently until just combined. It is vital NOT to overmix the batter, as overmixing can develop the gluten too much, resulting in tough, chewy muffins instead of light and tender ones. Once just combined, carefully fold in the cooled butter, chocolate, cranberry, and pistachio mixture until everything is evenly distributed.
